Gluten Free Low Carb Bread

When it comes to gluten allergies or intolerance, Bread is always on the top 3 missing list, don’t you think ?

For me it is, so it has been a long struggle to find out what kind of bread I can buy, like and what fits to my needs regarding PCOS. I was always (and sometimes still) going from one bread brand to the other. I have now some habits and some favourites ones but often, I am not completely satisfied.

Then I started to look for the perfect one, the one that would fit the best to my PCOS needs and that I can do at home.

And there it is … ! The best PCOS bread so far, according to me, low in carbs, gluten free, and absolutely delicious.

I got inspired by Delish and their Keto Bread and I am now able to bake my own bread when I want, prepare my daily portions, and enjoy it without any guilt. You will only need eggs, almond flour, baking powder, salt, olive oil and almond milk, 15 minutes of preparation you will be almost done !

The best Part about this bread is, that it is full of protein, healthy fats and low carb. It is perfect for a PCOS friendly breakfast, a snack in between or a Sandwich for lunch.

Gluten Free Low Carb Bread

if you want your bread to be even more special, you can add seeds of choice. And if you want to use less almond flour you can use 100 gram Almond flour and 100g gluten free flour of choice.

Ingredients

Instructions

  1. Separate egg whites and egg yolks.
  2. In a big bowl, whip egg white until it's stiff.
  3. Mix almond flour, with Xan-Gum, baking powder and salt.
  4. Beat egg yolks and mix it with the olive oil until it is well mixed.
  5. Add the almond flour mix. Slowly add almond milk until everything is well mixed and no flour crumbs are left
  6. Fold in egg white, step by step until it all comes together.
  7. Bake Bread for 45 minutes on 180°, until it's golden brown.
