Step-by-Step Recipe
  1. In a bowl, combine the flour, sugar, and salt. Add the cold, cubed vegan butter and use your fingers to rub it into the dry ingredients until the mixture resembles breadcrumbs. Gradually add the cold water, mixing until a dough forms. Wrap it in cling film and chill for 30 minutes.
  2. Preheat your oven to 180°C. Roll out the chilled dough and press it into mini tart forms. Prick the base with a fork and line with parchment paper (Optional:fill with baking beans). Bake for 10-12 minutes until the edges are golden. Remove the parchment and beans, and bake for an additional 5 minutes.
  3. While the crust is cooling, melt 300g of dark chocolate. In a separate pot, warm 300g of coconut milk. Combine the melted chocolate and warm coconut milk, adding a pinch of salt. Mix until smooth and velvety.
  4. Pour the luxurious chocolate filling into each pre-baked mini tart shell. Smooth the top with a spatula for an even finish.
  5. Allow the mini tartes to cool to room temperature before placing them in the refrigerator. Let them chill and set for at least 2 hours, or until the chocolate filling is firm.
  6. Once set, your Mini Chocolate Tartes are ready to be enjoyed! Serve them chilled and relish in the perfect balance of a buttery crust and luscious chocolate filling.
