Experience pure indulgence with these double-coated coconut cream truffles, combining rich dark chocolate and luscious coconut cream in every bite.

  1. Gather all the ingredients, finely chop the dark chocolate, and ensure you have the coconut cream separated from a can of full-fat coconut milk.
  2. Heat up the coconut cream in the microwave until luke warm (it should not boil).
  3. In a heatproof bowl, combine the finely chopped vegan dark chocolate and coconut cream.
  4. In a small saucepan, melt the vegan butter over low heat. Once melted, pour it over the chocolate and coconut cream mixture. Let it sit for a minute to allow the heat to melt the chocolate. Stir until smooth.
  5. Add the vanilla extract to the melted chocolate mixture and stir until well combined.
  6. Allow the mixture to cool to room temperature. Cover the bowl and refrigerate for at least 4 hours or until the mixture is firm.
  7. Once the mixture is firm, use a spoon or a melon baller to scoop out small portions and roll them into balls. Place the truffles on a parchment paper-lined tray.
  8. Put the truffle in the fridge for 30 Minutes or 15 Minutes in the freezer.

  11. Place the coated and topped truffles back in the refrigerator for about 30 minutes to set.
