Perfect gluten-free burger buns

Introducing our perfect gluten-free burger bun recipe! Delicious, crispy, and easy to make! We offer two versions: one with Schär’s gluten-free all-purpose flour mix for a quick fix, and another with a homemade fiber-rich flour blend.

Instructions

Prepare the psyllium husk
  1. In a bowl, combine the psyllium husk with lukewarm water (235ml).
  2. Stir well and set aside until it forms a gel-like consistency.
Step-by-Step
  1. For Option 1: Add 230g @schar_sansgluten all-purpose flour (Option 1) and 30g corn starch
  2. For Option 2: 100g Thai rice flour, 110g corn starch and 50g sorghum flour
  3. Ad sugar, and salt.
  4. Make a well in the center of the dry ingredients.
  5. Pour in the psyllium husk mixture, olive oil, and apple cider vinegar into the well.
  6. Gradually incorporate the wet ingredients into the dry ones, stirring until a sticky dough forms.
  7. Once combined, knead the dough with your hands for about 5 minutes until it becomes smooth.
  8. Preheat your oven to 220°C.
  9. Prepare your baking pan by brushing it with oil or lining it with baking paper.
  10. Once the dough has risen, punch it down and divide it into equal-sized portions to form buns.
  11. Shape each portion into a bun shape and place them on the prepared baking pan, leaving some space between each bun.
  12. If using, beat an egg and brush it over the tops of the buns for a shiny finish.
  13. Optionally, sprinkle sesame seeds on top of the buns.
  14. Let the shaped buns rest for about 15-20 minutes.
  15. Just before placing the buns in the oven, add 8-10 ice cubes to an oven-proof pan at the bottom. This provides steam, ensuring a moist interior.
  16. Bake for 15 minutes on 220°C and do not open the door in between.
  17. After the 15 minutes, take out the ice cubes, turn down the oven to 200°C and bake the buns for another 30 Minutes on 200°C until they are crispy and golden brown.
