Have you ever heard about Schnitzel ? Let us explain to you quickly what this dish is.

To come back to the origins, “Wiener" Schnitzel” can litterally be translated by ''Escalope from Vienna”. This dish is made out of a veal escalope, fried with flour breadcrumbs. It is eaten a lot also in Germany.

As you read, the main ingredients of the original recipe are meat and non gluten-free flour. So we decide to find a way to recreate this recipe to make it gluten-free and vegan. That’s how we came up with our own version of the Tofu Schnitzel. Trust us: it is very easy and delicious. 

For the dough you will need corn starch, water, flavors and gluten-free soy sauce. Then for the breadcrumb mix we took gluten-free breadcrumbs and gluten-free cornflakes. And the other ingredients are just tofu, oil, corn starch, rice as a side dish and sauce of choice.

And it is ready to serve!

Ingredients

Ingredients for the dough (should have a creamy consistency)
For the breadcrumb mix
Other ingredients

Instructions

Prepare first
  1. Cut the tofu in half and press it down with a dry paper towel.
  2. Mix all the ingredients for the dough in a bowl until well combined.
  3. Crumble the gluten free cornflakes with your hands until they have breadcrumb consistency and mix with 1/2 a cup of gluten free breadcrumbs.
Breading the tofu
  1. Coat the tofu with rice flour.
  2. Dip tofu into the dough mix until well covered.
  3. For the last step, covere the tofu with the cornflakes-breadcrump mix.
  4. Heat up a pan on medium heat with olive oil and fry until brown and crispy.
  5. Serve with rice and sauce of choice.
