Summer Pasta Salad

Gluten-free & Dairy-free

We both always love a good pasta salad. So we always find an excuse to include pasta salads everywhere: barbecue, friends night, game night, summer lunches & evenings, etc.

In summer our friends always compliment the pasta salads that we offer so we decided to share the favourite of our friends. The process is pretty straight forward as you basically just have to put together all ingredients.

These ingredients are :

  • Smoked salmon

  • Vegan feta (we used and love Violife)

  • Gluten-free pasta (we highly recommend penne from Rummo)

  • Cucumber

  • Tomatoes

  • dill

  • salt

  • sauce (vegan milk, vegan mayo, agave syrup, rice vinegar)

And here it is, a good refreshing breeze for your summer meals!

For the Sauce

Instructions

  1. Cook Pasta according to package describtion. Once done, drain the pasta in a siff over the sink.
  2. Add Pasta to a salad bowl.
  3. Cut all main ingredients into small cubes and add to the salad bowl.
  4. Mix all sauce ingredients together, blend with a hand blender and add to the salad.
  5. Enjoy :)
