We recently went to Mexico for our Honeymoon (see blog article here) and we were lucky enough to visit many different cities in the Yucatan region, which is an amazing. We learned that the type of food can be totally different from one region to the other in mexico so it is hard to categorized Mexican food.

From our experience in this region, our favorite recipe was CHILAQUILES!

We litterally fell in love with this dish made out of tortillas chips, meat and veggies. So once we where back home, we immediately decided to make our own 100% gluten-free and dairy-free version. And we are so excited to share it with you guys !

For that you will need: tortillas chips, chicken, vegan feta, 2-4 peppers, 3-4 tomatillos or orange tomatoes, coriander, onions and garlic !

Trust us you will feel an intense Mexican vibe growing in you ! We hope you will love it at least as much as we do!

Homemade Chilaquiles

This is one of our favourite meals from mexico.

Ingredients

Instructions

  1. Cut the tortilla into triangles so they look like tortilla chips and fry them until golden brown in 100 ml frying oil.
  2. Cook peppers, tomatillos or orange tomatoes until soft and blend in a mixer together with one onion, coriander and garlic. This will create a beautiful and spicey green salsa sauce. Add salt if needed.
  3. Break the vegan feta down in small pieces, same as the roasted chicken.
  4. Cut one onion into rings.
  5. Start layering everything, we recommend to start with one layer tortilla chips, chicken, vegan feta, salsa, onion rings, coriander and repeat.
